Roasting a blend without separating the individual origins means applying the same heat profile to different types of beans. The result can be uneven roasting: some beans may be over-roasted or burnt, while others remain underdeveloped. This is a technical compromise that artisanal coffee simply cannot afford.
Instead, we respect the ideal roasting time for each single origin, roasting slowly and at lower temperatures. Only after bringing out the best fruity, floral or chocolate notes in each individual lot do we combine the coffees to create our artisanal coffee blend.
