For him, and therefore for us, quality coffee is coffee that starts from far away and reaches the cup without ever betraying its origins. Here are the three pillars on which our selection is based.

Zero Defects: The Integrity of the Bean

The first point is the raw material. Quality coffee is coffee with zero defects. This doesn’t just mean the bean looks good, but that its internal structure is perfect enough to withstand roasting. If the bean has imperfections, these will turn into bitterness, into an unpleasant taste in the cup. Our selection is careful and rigorous: we discard anything that could compromise the sensory experience.

Consistency and Always Available

The second pillar is consistency: “If it’s good just after roasting but loses its quality after a week, that’s not quality.”
We want your espresso to be extraordinary today and a month from now. That’s why we monitor every single batch and study roasting curves: aroma and taste must stay the same, from the first coffee to the last.

Finally, the most concrete aspect: price. Quality coffee must have a fair quality-to-price ratio. This doesn’t mean being the cheapest, but offering real value. Paying the right amount for an excellent product, without speculation, because the point isn’t the highest price, but the awareness of drinking something excellent.
